What is Mango Pancake?
Mango pancake is a popular Hongkong dessert that is typically served in Chinese restaurants or boba shops. It is a perfect dessert for any mango lovers who are too big of a fan of sweet desserts. The fresh mango paired with homemade whip cream provides a flavor that is refreshing yet creamy and pairs flawlessly with a thin layer of crepe pancake layer on the outside.
Fun fact: I was inspired to make this dessert after seeing it on the menu of one of my local boba shops... for 8$, 2 pieces... might as well make it at home for better!!
Preparation Process
Start by whisking together egg, melted butter, milk, and mango syrup in a bowl
sift in all the dry ingredients including baking powder, flour, cornstarch and powdered sugar, combine everything together and sift the batter through to ensure extra smooth crepe
to make the whipping cream, whisk together heavy cream, powdered sugar, and vanilla extract together in a bowl until a stiff peak forms
cut the mango and peel off the skin and put that on the side, start making your crepe
flip the crepe on the other side once there is no running batter, let it chill to room temperature, and then start assembling the mango pancake together
fold the sides of the pancake tight and cut it in half, then you’re all set!!
Tips for success!
- If you have time, please make sure you let the crepe batter set in the fridge for a lighter pancake
- mix all the wet ingredients in before sifting the dry ingredients in to ensure that there are no lumps in the crepe batter
- adding in mango extract/syrup to the batter is not required but is highly recommended! It acts as a sweetener and also strongly enhances the flavor of mango
- Storing tip: keep your mango pancake in the fridge with a closed lid, for a better texture, it almost tastes like a mango ice cream/cream puff. (that is, of course, you don’t finish it all in one setting after making them… which is very difficult for me XD)

Ingredients
Crepe/ Pancake Batter
- 1/2 cup milk (118g)
- 3tbsp flour(24g)
- 1tbsp corn starch(8g)
- 1/2tbsp powder sugar (4g)
- 1/2 tbsp mango extract/syrup (7g)
- 1 egg
- 1/2tbsp butter (7g)
- pinch of baking powder
Fillings
- 1 cup heavy whipping cream (226g)
- 1tsp vanilla extract (4g)
- 2tbsp sugar (add more to your liking) (24g)
- Fresh mango
Instructions
- mix all the wet ingredients together in a big bowl (milk, melted butter, egg, mango extract)
- sift the dry ingredients(flour, corn starch, powder sugar, baking powder)
- combine the wet and dry ingredients together until a smooth batter forms and leave it in the fridge to chill while we make the whipped cream
- in a bowl add in heavy cream, start whisking it using an electric whisk, and add in vanilla extract then sugar/powder sugar little by little until stiff peak forms
- peel the mango skin off and cut them into small squares
- now we can start making the crepes by adding in 1/4 cup of crepe batter in a nonstick pan, make sure the heat is set to med/low
- spread the batter evenly on the pan and flip once no liquid can be seen on the surface, roughly around 45 seconds to 1 minute on each side
- let the crepe chill on the side to room temperature and then assemble it together with a layer of crepe, fresh cut mango piece, whipping cream
- fold the crepe together and seal the ends
- cut in half and enjoy!
