What is Pandan?
Panda, aka pandanus amaryllifolius is a popular tropical plant native to southeast Asia. It is one of the most well-known flavors used in desserts such as cakes, mochis, and ice cream in Asia. Growing up, I would always remember my parent buying pandan coconut cakes from our favorite Asian bakeries. Although I didn’t know what it was made from at that time, I’ve always loved the bright and vibrant green color and the creamy unique flavor that it adds to the cake. When I found out later that this delicious taste comes from pandan, I have been adding it to many other desserts such as this mochi waffle, and they never fail to amaze me~
Fun fact: Pandan chifon cake is the national flavored cake in Indonesia!
How is Mochi Waffle Different From your Typical Everyday Waffle?
Instead of regular flour, mochi waffles are made mostly with mochiko glutinous rice flour! As a result of this, the texture of a mochi waffle is often times chewy and soft in the middle and crispy on the outside, which is the reason why it is one of my favorite breakfasts to make every morning~
Materials/ingredients that you Might Need:
Besides a waffle maker, to make this Pandan matcha waffle, the main ingredients will be mochiko flour, pandan extract, and matcha powder.

Matcha Pandan Mochi Waffle
Chewy on the inside and crispy on the outside, try this unique and yummy waffle for your next breakfast!
Ingredients
- 5g matcha powder(1tsp)
- 140g milk
- 2 tbsp butter(25g)
- 4g pandan extract (~1tsp)
- 1egg
- 150g mochiko flour (1 cup)
- 1 tsp baking powder
- 30g corn starch (3tbsp)
- pinch of salt
- 60g cup sugar (a little more than 1/4cup)
toppings
- chopped strawberries
- condensed milk
- powdered sugar
Instructions
- add matcha powder and milk in a bowl and start whisking it until no matcha lumps can be seem
- mix in together butter, pandan extract, and egg
- sift together mochiko, sugar, baking powder, salt, and cornstarch
- combine all the wet and dry ingredients together until a smooth batter forms
- heat up your waffle maker and oil it using butter
- pour the batter into your waffle maker and cook until both sides are crispy and golden
- top it off with fresh fruits and condense milk
- enjoy!
Tips for success!
- If you do not have mochiko powder, substitute it with tapioca starch with a 1:1 ratio!
- whisk matcha powder with milk first. Matcha tends to not mix well if you add them in with all the other ingredients!
- toppings such as honey, maple syrup, condensed milk, and fresh fruits pairs exceptionally well with this mochi waffle!
- let the waffle batter cool in the fridge for 10-30 minutes for a fluffier waffle
- if you prefer a crispy waffle, let it cook in the waffle maker for an additional 30 seconds after the lights are turned off
- always butter your waffle maker before putting your batter in to ensure that it does not stick to the maker when you open it
- mix the wet ingredients first before sifting in the dry ingredients just to make sure that there are no clumps in the batter
