Fun fact: This recipe was initally made due to the huge amount of almond flours i have in my pantry that i did not want to waste, so if you also face the same problem as me, join me as we bake this amazing dessert!

Almond Cookies
Almond cookies, those golden nuggets of joy, are like a sweet symphony for your taste buds.
Ingredients
- 113g Room temperature butter (1 stick)
- 100g granulated sugar (1/2 cup)
- 50g brown sugar (1/4cup)
- 120g AP flour (1cup)
- 25g almond flour (1/4cup)
- 6g almond extract (1 1/2 tsp)
- 2.4g baking soda (1/2 tsp)
- 2 egg yolks
- Almond for topping
Cooking Instructions
In a bowl, add in room tempt butter, brown sugar, sugar, and almond extract. Mix them together using a spatula
sift the almond flour, all-purpose flour, and baking soda into the mixture along with egg yolks. Once again mix it all together with a spatula. (do not over-mix at this point, you want your dough to be crumbly to ensure a crunchy cookie)
Transfer the dough into a saran wrap, gently press and roll it out to a cylinder shape
Let this mixture sit in the fridge for around 20 minutes and then cut them into smaller cookie doughs
press down each cookie dough flat and add on an almond as topping, bake at 350F for 15-20 minutes, Once the cookies are done baking, make sure to let it cool for at least an hour before enjoying them!(so they can get crunchy)
