What is Menbosha?
Menbosha, also known as fried shrimp toast, is a Cantonese dim sum specialty originating from Hong Kong. This dish consists of bite-sized triangles of bread, which are generously coated with a mixture of minced shrimp and then either baked or deep-fried to perfection. Shrimp toast serves as a popular appetizer in Western Chinese cuisine. The original shrimp toast is named 面包虾 which literally and directly translates to toast(面包) shrimp(虾). Over time this dish has popularized all over Asia which includes the Korean version named Menbosha!

Main Ingredients
The typical ingredients for menbaosha are quite straightforward, consisting of toast, minced shrimp, garlic, and various seasonings. However In contrast to the classic menbosha that typically features shrimp exclusively, I intend to enhance the flavor by incorporating imitation crab for a more harmonious combination.
Shrimp toast/menbaosha/面包虾

Ingredients
- 4 pieces of toast
- 150g shrimp
- 100g imitation crab
- 15g olive oil (1tbsp)
- 18g oyster sauce (1tbsp)
- 9g mirin (2tsp)
- 3g gochugaru (1tsp)
- 10g corn starch (1 1/4tbsp)
- 6g garlic salt (1 tsp)
- 6 g chopped chived (2tbsp) optional
- oil for frying
Dipping sauce suggestions
- siracha honey
- ketchup
- sweet chili sauce
- mayonnaise
- ranch
Cooking instruction
Start by peeling and mincing shrimp and imitation crab using a knife (you can also do this with a food processor)
season the minced shrimp and imitation crab with olive oil, oyster sauce, mirin, gochugaru, garlic salt, cornstarch, and chopped chives
slice 8 pieces of bread into 4 even biteable pieces
apply around 1.5 tbsp of the menbaosha filling on the biteable toast pieces, stack another piece of toast on top, and then using a knife, flatten out the edges
in a fryer, add in your oil and heat it up to 110c (230f) and fry both sides til slightly golden, for around 5 minutes (2.5 minutes on both sides)
take the menbaosha out of the fryer and increase the heat up to 180c (350f) fry until both sides are golden light brown! (this should take no longer than 2 minutes)
top it off with some cilantro and enjoy it with your favorite dipping sauce!
Tips for success!
- Double fry for a crispy edge
- use a food processor if you do not want to mince the shrimp by a knife
- dipping sauce is very diverse, I recommend siracha honey, ketchup, or sweet chili sauce
- you could also air fry this at 350 for 10 minutes, however, it might not be as crispy as you might or 380f in the oven for the same length of time!
- If shrimp if not your cup of tea, feel free to use other proteins such as minced tofu, ground chicken, pork etc!
