Materials needed!
Step by the Step Instruction
Start by using the double boilers method. Melt down chocolate chips with coconut water to make our custom chocolate plates! freeze them for at least 3 hours for the chocolate to firm up. Once it has harden, you can curve on the words using toothpicks. (you may skip this step if you do not wish to recreate the exact cake from Nana)
add frozen blueberries, sugar, jam, and lemon juice into a pan and slowly cook it down under med-low heat for around 10 minutes (don’t forget to stir constantly)
blend together Biscoff cookies with melted butter and press it firmly to make the curst of our cheesecake. Leave the crust to cool down in the fridge while we make our cheesecake fillings
in a bowl, add in cream cheese and sugar, whisk them together very well, and then add in your whipped heavy cream
In a separate bowl, add in lukewarm milk to agar powder, mix well, and add it to the cheesecake filling along with vanilla extract and lemon juice
give everything a final good whisk until your cheesecake mixture is silky smooth, then you can transfer them to your mold and place it in the fridge for at least 4 hours or overnight
Remove the mold from the cheesecake by slightly torching the side of the mold with a blow torching. you can also wrapping around a hot towel around it and let the gentle heat do the work.
place the blueberry jam, DIY chocolate plate, and fresh fruits on the top, and enjoy~
Tips for success!
- you can use gelatin powder, and cornstarch to replace the agar agar powder
- I would always recommend to enjoy your cheesecake overnight so that the cheesecake has time to set as time will enhance the flavors and texture
- make your curst with whatever cookies/biscuits you desire! I’ve tried it with oreo and graham crackers, they all tasted amazing!
- rinse your knife with hot water for a clean cut

- 150g chocolate chips (3/4 cup)
- 14g coconut oil (1tbsp)
- Tin foil (6cmx 2.5cm) for shaping

Cheese Cake Curst
- 95g Biscoff cookies (you can substitute it with any cookies or crackers of your choice) 3/4 cup
- 30g melted butter (2tbsp)
Cheese cake
- 150g cream cheese (2/3 cup)
- 180g heavy whipping cream (3/4 cup) whipped
- 5g agar agar powder or gelatin (1.6tsp)
- 38g sugar (3tbsp)
- 4g vanilla extract (1tsp)
- 15g luke warm milk (1+1/4 tbsp)
blueberry jam
- 80g frozen/fresh berries of your choice (1/2cup)
- 20g of blueberry jam (3tbsp)
- 40g sugar (3tbsp)
- 9g lemon juice (2tsp)
other toppings(optional)
- fresh strawberries
- mint
- fresh blueberries
