The history of ginger milk pudding(姜撞奶)
Ginger milk pudding originated in Guangzhou, China, in a small village called Shawanzhen. The traditional ginger milk pudding consists of only 3 ingredients; milk, ginger juice, and sugar. The legendary story behind this dish comes from the Shawanzhen village where an elderly woman caught a cold and heard rumors that ginger juice is extremely beneficial for coughs. But as ginger juice itself is spicy, she added warm milk to the bowl to balance out the spiciness. These ingredients then magically liquified together and 姜撞奶 ginger milk pudding was created. This dish is not only beneficial for colds and good for your health, but it is also yummy and filling which makes the perfect breakfast!
Fun fact: the word 姜撞奶 translates directly to Ginger hit on rice which descibes the process where hot milk directly hits on the surface of the ginger juice creating the pudding.
Why does this combination work?
Ginger milk pudding works thanks to the zingibain that is contained within ginger and the glucose fat that is in milk. When warm milk is combined with ginger juice, special enzymes gets released from both ingredients causing the milk content to start to liquefy creating a perfect texture like tofu.
Important tips for a fail-proof pudding
- Use REAL gingers!! (in order for the recipe to succeed, do not use store-bought purees or any other substitute because they do not contain the zingibain that is needed for the milk to curdle)
- Here are some of the tools that you can use to puree your ginger
- Cheese grater, Ginger grater, or food processor to cut the ginger up into squeezable textures
- Cheesecloth to strain the ginger juice out

- Make sure you use whole milk only (unfortunately any of the nondairy milk options will not work for this recipe)
- Heat the milk to 70-75C
- you can choose to use a cooking thermometer or just simply turn it off right when it’s about to boil like what I did
- Let the pudding sit for 5 minutes after warm milk is poured onto the ginger
Addons and substitutes
In this recipe, I decided to add matcha and strawberry because yardy know!! it’s always my favorite combination. But please feel free to add any of your favorite ingredients as well. Here are some of the ideas that you might be interested in.
- Add in Ube extract for ube-flavored ginger milk pudding!
- Try adding in Pandan as well!
- Drizzle some honey on top for a sweeter pudding
- Substitute strawberries with any of your favorite fruits (blueberries, cranberries, blueberries, bananas etc)

Preparation Process
Start by grating ginger and squeezing the juice out of it
add in milk, sugar, and matcha powder into a pot, and turn the heat off right before it’s about to boil
cut strawberries into small cubes and throw some on the bottom of your bowl along with the ginger juice
pour hot milk directly on top of the ginger juice, cover, and rest for 5 min, after that if you put a spoon on top and it stays, then you have made it!!
Strawberry Matcha Ginger Milk Pudding
Traditional ginger milk pudding with matcha combined with strawberry is not only beneficial for your health but also has the most magical flavors of sweetness with a little spicy after-kick!
Ingredients
- 1 cup of milk
- 1 tbsp fresh ginger puree/juice
- 2.5 tbsp sugar
- 1 tsp matcha powder
- 2 strawberries (cubed)
Instructions
- peel the skin off ginger and grate it using whatever tools you are comfortable with
- with a cheesecloth, squeeze out the ginger juice in a bowl and save it for later use
- In a pot, add milk, sugar, and matcha powder, mix well and heat it up to 70-75C
- cut strawberries into small cubes and add that to the bottom of your bowl along with ginger juice
- pour the warm milk directly on top of the ginger juice and strawberries (act quickly!)
- cover for 5 minutes using a plate
- place a spoon on top of the pudding once 5 minutes have passed, if the spoon doesn't sink, congrats you did it!!
- top it off with more strawberries, honey, or fruits of ur choice
