Yangchun mian is a popular noodle dish that originated in Yangzhou, China. This noodle dish is mostly known for its speedy preparation process and refreshing taste. The history of this dish trace back all the way to the Chinese 27th Dynasty, when emperor Qianlong got attracted by a smell from a noodle street vendor on a business trip. He sat down, ate two bowls of it, and wondered what the name of this dish is because he has never tried a noodle dish so appetizing and refreshing. The street vendor told him that this dish does not have a name yet as they were just calling it soup noodles at the time, the emperor was flustered and immediately gave it its current name; Yang Chun Mian.
In the 1980s, when pork prices in China sky rocked, people started to replace meat with lard(pork oil) to imitate the pork taste without adding in the expensive meat.
Yangchun mian is also often enjoyed with tea eggs, spring onions, cabbages, and bean sprouts.
I made this dish for my father on his birthday as I was very short on time since he has to leave for work. Despite the 10 minutes of chaos I had while making this dish, it is still approved by my Chinese dad, who is not only a noodle enthusiast but also a cook himself (yay!!!) In Chinese culture, eating noodle soup on your birthday supposedly gives you good fortune and longevity. Noodle symbolizes the long life that you will live and has always been a staple dish in Chinese culture. In my family, we also throw in an extra boiled egg for extra love.
Fun fact: yang chun mian is called called plain noodles because it mostly only requires water, soy sauce and lard.
Main ingredients for this dish(Super simple!)
One of the main ingredients you will be needing is lard(pork fat)! Since we are not using any meat or veggie stocks for this recipe. Lard is a very important ingredient to give it that umami flavor broth. Besides lard, all you really need is some soy sauce, water, and green onions.
Preparation Process
Start by sautee garlic with lard, and then add in the rest of the broth ingredients
cook your noodles and egg in a separate pot, drain and put them back into a bowl
pour the broth into the bowl, add in cabbage, the meat of your choice, egg, and green onions

Ingredients
Broth
- 1 tbsp Lard
- 3 cloves garlic
- 2 cups water
- 1 tbsp soy sauce
- 1 tsp Chinese cooking wine
- 1/2 tsp chicken boullion
- 1/2 tsp sugar
- 2 oz noodle of choice
- 3 slices charsiu pork (optional)
- Chopped green onions for topping
- dash of 5 Chinese spice powder
- 4 leaves bakchoi cabbage
- 1 hard boil egg
Instructions
- In a pan, add lard, garlic and slightly sautee to get the aromas out
- add in water, soy sauce, Chinese cooking wine, chicken bullion, sugar, and five spice powder, cook until boil
- in a separate pot with boiling water, add cabbage and noodle of your choice
- drain the noodles and cabbage out and pour them into a bowl
- add in the north and top it off with green onions, boiled egg, and some charsiu pork
- Enjoy~
Notes
- for the simple traditional yangchun noodle recipe all you really need is lard, soy sauce, hot water, and noodles. so you can skip the other ingredients if you really want (but try adding the others because it makes the noodle soup so much tastier! I promise!)
-if you are having a hard time attaining lard, try replacing it with some peanut oil, veggie oil, or sesame oil! (just wont taste as refreshing and flavorful as lard)
