What is miso soup made out of ?
Miso soup is a classic Japanese dish that is typically made with miso paste, dashi stock, tofu, and seaweed. It is extremely easy to prepare and has proven to be incredibly healthy for our bodies. Due to the rich nutrients contained in the miso paste, regular consumption of miso soup can help our body with easier digestion, strength our immune systems, and reduce risks for various cancers.
Fun fact: Miso paste is made with fermented soy beans, salt, koji, and water that takes up to 3 years to make!!

Customizing your miso soup
Miso soup is very customizable and the only 100% necessary ingredient you must use is miso paste.
Other than that, please feel free to add in any vegetable and proteins of your choice such as mushrooms, onions, leeks, tofu, and even potatoes! If you want your broth to be extra flavor, try adding in calms and other shellfish such as shrimp~
For a more refreshing/lighter miso soup, you can also consider using white miso instead of traditional red miso.
Preparation Process
Soak wakame/dried seaweed in hot waters, and cut up some tofus for preparation
add bonito flakes and kombu in hot water
drain the bonito flakes and kombu out and there you have Dashi stock~
add the dashi stock back into the pot and add in tofu and wakame
turn off the heat and using the hot broth, stir the miso paste into the stock, top it off with some green onions and you’re all done!

Ingredients
Dashi stock
Add on ingredients
- 200g tofu
- 5g Wakame
- handful of chopped green onions for topping
Instructions
- soak wakame/dried seaweed in hot water
- add 3 cups of water in a pot, follow by the kombu and bonito flakes to make dashi stock
- boil for 3 minutes and drain the kombu and bonito flakes out, and your dashi stock is complete!
- add dashi stock back into the pot
- put in diced tofu, wakame
- turn off the heat and use the remaining heat, to stir the miso paste into the soup
- top it off with chopped onions to your taste
- enjoy~
Notes
- for the vegan option skip the dashi stock, instead, add in dried shitake mushroom for a boost of umami!
- If you are in a rush or want an even faster way to make miso soup, try using powder dashi stocks instead, it's equally as yummy and saves you a little of time.
- Since miso is fermented soybean paste, you should not mix miso paste in boiling water because it will kill all the probiotics contained in miso, which is one of the main ingredients that brings you lots of health benefits.
