Chichi mochi, sometimes known as chichi dango or simply mochi, is a popular Japanese sweet treat that has been enjoyed by many different cultures for centuries! Traditionally, it is made up of two main ingredients: “Chichi” and “Mochi“.
Chichi is azuki red bean paste, that is often times paired with mochi to make the chichi mochi. This paste is made by pressure-cooking red beans to a soft consistency and then mashed and sweetened with sugar. Thankfully, in today’s age, we can skip the hard work of making them from scratch because you can find these delicious red bean pastes easily in your day-to-day Asian grocery markets or simply online! There are also various types of red bean paste such as creamy textured ones and chunkier textured ones depending on your personal preference! In this recipe, we are choosing the creamy textured ones because I find them the most suitable to pair with fruits and mochi.
Mochi is one of the most popular sweet delicacies in the world today that originated in Japan. It is a sticky and chewy rice cake made from glutinous rice. Traditionally, sweet glutinous rice is cooked and pounded into a thick, soft, and elastic dough. The dough then will be cut into smaller pieces for easier consumption. In this recipe, we are taking a shortcut by making the mochi using just water and mochiko(glutinous sweet rice) powder.
Fun fact: In the japanese culture, chichi mochi is not only loved by many for its taste, but also for its culture signicance of bringing good lucky and auspsicous occasions.
How did I discover this delicious combo of fruits and chichi mochi?
Just like any other great discovery, this treat is a surprise that I found in my day-to-day grocery market called Don Quijote. Although I had never tried this dish before, I was instantly captivated by the beautiful look of it. The fruit chichi mochi is a combination of chichi mochi, whipped cream, and fresh fruits on the top. My best friend and I were both so impressed by it on our first bite, it has the chewy texture from mochi, sweet and creamy flavors from chichi(red bean paste), and whipped cream, and the refreshing addon of the fruits make it a perfect dessert for any occasion! So of course I had to share this recipe so that everyone in this world can give this delicacy a try at home!
Preparation Process
Start by adding in mochiko, corn starch, sugar, vanilla extract, oil, and water/milk in a bowl. Mix until no powder can be seen, and then pour it into the pan
stir the batter with a chopstick or whisk in low heat until a solid dough form
cut the mochi in half for coloring
knead and fold the dough until color appears
place it in a square mold and store it in the fridge to set for 10-30 minute
prepare fruits and whipped cream
cut the mochi into blocks and skewer them
apply on a layer of azuki, whipped cream and fresh fruits
you can also make mini versions of them by cutting them into small cubes! enjoy~
Storage
This fruit chichi mochi can be enjoyed right away after it is made. The texture of the mochi should still be very soft and chewy. However, my favorite way to enjoy it is to cover it with a saram wrap and keep it in the fridge overnight. In this way, the mochi becomes slightly dense but still soft, while the whipped cream and azuki turn cold. It is almost like eating a mochi ice cream!
These fruit chichi mochis are good in the fridge to store for up to 1-2 weeks!
Fruit Chichi Mochi
Chichi mochi is a delightful and popular Japanese sweet treat that has been enjoyed for centuries.
Ingredients
Mochi (makes about 10 skewers/servings)
- 160g Mochiko (1 1/2cup)
- 50g Corn starch (1/4cup)
- 8g Vanilla Extract (2tsp)
- 240g Water/Milk (1 cup)
- 28g vegetable oil (2 tbsp)
Whipped cream
- 120g heavy whipped cream 1/2 cup)
- 25g sugar (2 tbsp spoon)
- 4g vanilla extract( 1 tsp)
- 3g unflavored gelatins - optional for stable and sturdy whipped cream(1tsp)
Other ingredients
- Azuki red bean pastes
- fruits of your choice ( Strawberry & oranges)
- powdered sugar
- food coloring(optional)
Instructions
- in a bowl, add in mochiko, corn starch, water/milk, sugar, vegetable oil, and mix thoroughly until no grains can be found
- pour the mochi batter in a none stick pan (you do not need to add oil) and stir it with a whisk or chopsticks on LOW- HEAT
- keep string for about 5 minute and the batter should clump up and in no time it will form a smooth mochi!
- take the mochi out from the pan and let it cool for about 10 minutes or until they can be handled by hand
- put on gloves and start kneading the mochi dough until they are stretchy and soft
- this is the step where you can feel free to add in food coloring to make your mochi look more vibrant and delicious (if you do not want to use food coloring, you can skip to step 9)
- separate the mochi into 2 portions and color one of your desire color, i used red gel coloring and smeared the color on the mochi with a toothpick
- keep on kneeing and folding it until all colors have been incorporated
- shape and push the finished mochi dough into a square or rectangle mold, make sure you dust the surface of the mold with corn starch to prevent it from sticking
- place the mold into a fridge for 10-30 minute until they are chilled to a better texture
- main while, we can make the whipped cream by whisking up heavy whipping cream with sugar, vanilla extract and unflavored gelatin until stiff peaks form
- cut strawberries and oranges to small pieces for topping
- Once the mochi has done setting in the fridge, take them out and cut them into 10 even pieces
- Insert each piece with skewers, and then its time to assemble everything together!
- pipe a layer of azuki paste on top of mochi, then whipped creams, and finally cut fruits
- dust with powder sugar and enjoy!
Notes
- make sure you dust all surfaces that the mochi touch with corn starch or flour, because they can be quite sticky!! (knifes, cutting surface, kneeing surface etc)
-make sure that your mochi dough is cooled down a little before you start kneeing them (watch the video to find out why lol)
-skewers are definitely not necessary but it is somehow important for the aesthetic of these and made it more appealing
-you can also make mini versions of these by cutting the mochis into small squares and adding on the exact same layers of toppings!
-store the fruit chichi mochi in the fridge for overnight for a even tastier treat!
