The making of traditional creme brulee and its history
Créme brûlée is a beloved dessert that has delighted palates for centuries with its rich and creamy custard base and crisp caramelized sugar topping. This amazing French dessert’s origin can be traced back all the way to medieval Europe, but it has evolved and gained popularity over the years to become a timeless classic in the world of desserts.
Fun fact: in french, creme brulee is directly transalted as "burnt sugar"
Why does this recipe still work with only 2 ingredients?
The traditional Creme Brulee consists of cream, egg yolks, sugar, and vanilla. The cream is heated and infused with vanilla flavor, and then egg yolk is combined with sugar to create a luscious custard.
Since ice cream, contains essentially all the ingredients that a traditional creme Brulee has(cream, vanilla flavor or whatever flavor you want it to be, sugar, and egg), all we need to do in this case is to add egg yolks into melted ice cream creating an easier process for this delicacy.
Preparation Process
Start by melting your ice cream in the microwave for around 30 seconds
add in the egg yolks and start whisking them well until the cream turns smooth and silky
stir the cream in med-low heat constantly until it thickens up and becomes a thicker consistency
add in fillings (optional) and pour the creme into your ramekin, leave this in the fridge for the creme brulee to set
dust with an even layer of sugar, torch, and add on your favorite fruits, crack, and enjoy!
What if I don’t have a blow torch to crystallize the sugar?
Do not worry! I’ve got 3 alternatives for you if you do not have a torch at home!
- place creme brulee in the oven and bake for around 5 minutes in 350F or until the sugar caramelizes on the top
- in a pan, add in around 5 tbsp of granulated sugar, and 1.5 tbsp of water, and slowly cook this mixture in med-low heat until the sugar turns into an ambry color and starts to bubble up a little, pour the caramelized sugar on top of your creme and wait until it hardens
- (a little more on the dangerous side!) place a silver spoon on a gas stove, and hold it on the flame for around a minute until the silver spoon turns red/black. Sprinkle an even layer of sugar on top of the creme brulee and use the hot spoon to carefully rub the back side of the spoon on the surface of the creme brulee, a crispy sugar layer shall be formed.

Ingredients
- 2 egg yolks (35grams)
- 2 scoops of icecream of your choice (roughly 125 grams)
- sugar on top (5 grams)
- fruits for decoration (optional)
- 5g fruit jam for filling (optional)
Instructions
- scoop 2 scoops of ice cream in a bowl and place it in the microwave to melt for around 30 seconds
- separate your egg yolk with egg whites
- add egg yolk to the melted ice cream mixture
- whisk and combine well
- shift it through for better consistency
- transfer the batter into a pot and constantly stir in medium-low heat until the batter thickens up a little bit, this should take around 5 minutes
- on the bottom of your ramekin/mold add in any jam/fillings you would like to add (this is optional)
- pour the thicken-up creme Brulee mixture into your ramekin
- Refrigerate for at least 30 minutes - 2 hours or overnight for it to set
- sprinkle an even layer of sugar on top of the creme brulee and start torching the sugar until a crispy sugar layer forms!
- top it off with your favorite fruits and enjoy!!
