If you’re looking for a filling sweet treat, then you should definitely give this cream custard onigiri a try!
What type of rice should you use?
For this recipe, I will be using glutinous rice. When cooked right, glutinous sweet rice is sweet, soft, and sticky, which is why it pairs perfectly with sweet ingredients such as sticky mango rice.
I also added coconut milk to the rice to add a boost of flavor, as well as match it with the custard cream filling.
you can also substitute the glutinous rice with sushi rice, or simply white rice.
Custard filling ingredients
The custard cream filling is made with mainly egg, sugar, milk, and flour. Rie from Tasty inspires the cooking method of this custard cream! In this process, once all the ingredients are well mixed, all you have to do is place it in the microwave in 30-second intervals and stir. Repeat this process until a thick custard cream forms. The process only takes about 2 minutes long and the custard cream comes out to be perfect!
Preparation Process
Start by soaking your rice overnight or at least 4 hours before cooking or steaming it. Then add in water and coconut milk and cook it in the rice cooker
in a bowl add in egg yolk and milk and mix until no sugar grains can be found, and then add in the rest of the ingredients and mix until smooth
cover the bowl in the saranwrap and microwave in 30-second intervals until custard cream thickens, and then pipe it in the middle of the onigiris
Cream Custard Onigiri
Sweet sticky rice filled with creamy smooth custard filling that takes only 20 minutes to make!
Ingredients
- 1 1/2cup (300g) Glutinous/ Sweet rice
- 1 cups of water +1 cup of coconut milk (if you are using rice cooker)
- 2tbsp sugar
Custard filling
- 2 egg yollks
- 1/2 cup milk
- 1 tbsp corn starch and flour mix
- 1 tbsp butter
- 3 tbsp sugar
- 1 tsp vanilla extract
Instructions
- soak the rice overnight or for at least 4 hours+
- drain the water out and cook it in a rice cooker with the water and coconut milk
- add in sugar and combine once the rice is done cooking and leave it on the side to cool down
- in a bowl add In the egg yolks and sugar, mix until all the sugar has dissolved
- add in corn starch+ flour, vanilla extract, milk and butter, then whisk everything together until smooth
- cover this mixture in saran wrap and microwave for 30 seconds, then mix.
- continue to microwave and stir until a thick custard forms (this should take around 2-2.5 minutes)
- mold the rice into onigiri shapes
- using a pipping nozzle, fill the custard into the center of the onigiri
- enjoy!
Notes
pre-soak your glutinous rice if you have the extra time in hand for around 8 hours for a sticker/ fluffier texture.
you can also substitute the glutinous rice with whatever rice you have at home but I would highly recommend sticking with the glutinous rice due to the texture it has once cooked right
wet your hands to avoid rice sticking to your side while molding the onigiri
