What are Beef Enoki Rolls?
Beef enoki rolls are one of the recent trending food recipes on TikTok! It was originally started by Tiffycook in one of her signature 20-minute cooking series back in January of 2023 that recently started trending again as of May 2023.
This recipe kind of reminds of sukiyaki beef, a Japanese hotpot dish usually served with shabu beef, and mushrooms in a sweet and savory broth. However, in this recipe, the shabu beef is wrapped around the enoki mushrooms, less broth is added and egg is added to create a creamer soup base.
Beef Mushroom Rolls
Tender beef wrapped around in enoki mushroom served in a warm and delicious dashi broth.
Ingredients
- 150g enoki mushrooms
- 150g shabu-shabu beef/pork (thinly sliced beef/pork)
- 2 eggs
- 1 sweet onion
- 1tbsp garlic paste (15g)
- 2tsp oil of your choice(10g)
Dashi stock (home made)
- 1 cup water
- 13g dried shio kombu/bonito flake
broth seasonings
- 1.5 tbsp soy sauce (22g)
- 1 tbsp oyster sauce(15g)
- 1tsp mirin (5g)
toppings(all optional)
- mozzarella cheese
- chopped green onions
- toasted sesame seeds
Instructions
- slice and chop up your sweet onions
- chop the ends of the enoki mushrooms off and split them into around 10 pieces by hand (around 15g for each)
- wrap the shabu-shabu beef with enoki mushrooms
- make dashi stock by adding water and kombu in a pot, boil for 5 minutes, and then drain the leftover kombu and bonito flakes out (you can also use packaged dashi stock for this step!)
- in a pot, add in oil and start sauteing the garlic paste and chopped sweet onions
- add in the enoki beef and pour in the dashi stock that we made
- add in soy sauce, oyster sauce, and mirin, and cover your pot for around 5 minutes until the beef is almost all done cooking
- whisk and pour your egg mixture into the broth, along with cheese and green onions.
- cover for another 5-10 minutes and you're all done!
