Perfectly fluffy and jiggly egg omelette that will melt in your mouth as soon as you take a bite out of it! This fluffy omelette will completely change your breakfast game~
What makes this omelette so fluffy?
If you have seen the anime Food war, then there’s probably a chance that you remember this dish made by Shoma. In the anime Food war, this dish was the one that immediately caught my eye, I mean just look at how jiggly, fluffy and delicious it looks!
the fluffy omelet stays fluffy and jiggly thanks to the meringue that is made from whisked egg whites. To make sure that you get the perfect texture meringue, make sure that you whisk your egg white until stiff peak forms! meaning if you pull your whisk off the bowl, there should be a stiff peak forming on the top of the mixture. Another way you can check whether it’s ready to go or not is to flip the bowl over your head, and if the meringue stays in the bowl without falling, then you’re all good to go! (this step is quite dangerous so I would definitely recommend the first method lol)
Important reminder: Since this omelette is not 100% cooked in the center, I would highly recomend using pasterized eggs if you can find them around you. Other wise, it is just like eating a sunnyside up egg with runny egg yolks on top. Therefore please eat at your own risk especially if you are pregnant, elderly, or have any severe health conditions.
Ingredients/tools that you will be needing:
This omelet recipe is extremely easy to make, you will only really need 3 ingredients; egg, heavy whip with salt, and spices
the heavy whipping cream adds an extra layer of tender and creamy consistency to the omelet which I would definitely recommend adding, if you do not have heavy whipping cream around, you can skip it or subsite it with regular cow milk.
some of the tools you will be needing are whisks, spatulas, and a non-stick pan!
Preparation Process
Start by separating 2 eggs, season the white with some salt pepper and cayenne, and add some heavy whipping cream into the egg yolk
whisk the egg whites until a stiff peak forms, and then scoop 1/3 of the white eggs into the egg yolk mixture
pour the mixture back into the egg whites and then fold them together GENTLY to avoid overmixing
cook the omelette in med/low heat with the lid covered, and fold the omelette in half
Add on some tomato sauce and cilantro, you’re all done!

- 2tbsp tomato sauce of your choice
- top it off with cilantro
Instructions
- separate the egg white and egg yolk
- season the egg white with salt, pepper, and cayenne pepper
- using a whisk, whisk the egg white until stiff peak forms (it will take 5-10 minutes so please be patient)
- you can also use an electric whisk for a faster result, just make sure you start off with the slower setting and increase it once it
- add in heavy whipping cream to egg yolks
- slowly fold the 2 mixtures together until no whites can be found
- in a frying pan, add oil and a scoop of your omelette mixture
- add about 1tbsp of water around the omelette to create steam
- over the pan with a lid
- cook this in medium-low heat for about 5 min
- using a spatula fold the omelette in half
- top it off with some chunky salsa and cilantro
- enjoy~
Notes
- When whisking the egg whites to stiff peaks, you can also use an electric whisk for a faster result, just make sure you start off with the slower setting and increase it once it
- do not over-mix the egg white and egg yolk otherwise you will end up with a flat omlette!
- use the fold method instead of just mixing them together with a whisk
- Use any sauce you would like on the top, in my case I am using chunky salsa just to imitate the original look from the anime Food War
